Kitchen Blends recipes: Easter Salmon frittata

Ingredients:

1 bowl Medline-Kitchen Blends®- Salmon
1 large egg
1/3 cup onion (chopped)
1/4 cup leeks
1/2 cup ciced potato
1/2 cup cottage cheese (nonfat)
2 spears asparagus
1 1/4 cup nonfat milk
1 teaspoon dill weed


Preparation:

  1. In a Vitamix® or high powered blender, pour in the bowl of Kitchen Blends
  2. In a hot skillet pan, fully cook 1 egg
  3. Once fully cooked, add to blender
  4. Chop up onion and keeps, add to blender
  5. Dice potatos into small pieces, add to blender
  6. Add cottage cheese, asparagus, milk and dill weed
  7. Blend at high speed fo ror 1 minute
  8. Strain blended meal
  9. Enjoy!
